I had to experiment with the ingredients a number of times before I came up with this recipe. All I do is chuck all these into a “Shake and bake’/roasting bag or alternatively mix all ingredients with your hands in a bowl. Then leave in the refrigerator for a couple of hours to marinate, ideally overnight.
Below are ingredients for 2 servings:-
- 6 chicken thighs (roughly 500g)
- 100-200ml natural yoghurt
- 1 shot of olive oil (40-50ml)
- 1 lemon
- 1 tbsp ground cinnamon
- 1 tbsp ground cumin
- 1 tbsp paprika
Once marinaded, place them in a baking tray and put in the oven for 30-40 minutes at 180°c. I did try cooking the chicken in the “shake and bake” roasting bag, however I like my chicken slightly burnt and more cooked on the outside, so I rather take it out of the bag place it on a tray.
When the chicken is ready, cut the thighs into pieces, a bit like a chicken donor kebab and serve with salad and choice of carbs e.g. rice, chips or in a wrap (or all together).
This is a go-to chicken recipe for me which I can have most days, as it is pretty versatile with what you can do with the chicken.
